Château de Fargues is a French wine estate in the Sauternes district of Bordeaux. It makes a single archetypal Sauternes sweet white wine – a classic blend of Sémillon and Sauvignon Blanc – from its vineyards around the village of Fargues at the very center of the appellation. Château de Fargues comprises 17 hectares (42 acres) of vineyards planted atop clay-gravel soils overlying a layer of clay and hardpan soil. On average, these vines are 35 years old, with only those aged seven years and over acting as the source of the estate's grand vin.
Beautiful deep gold. The slightly tight nose opens with freshness, resinous notes, chanterelles and fresh scents of undergrowth. Candied orange, candied fruits then arrive before quince, dried fig, encaustic, wax and a little saffron hint. The robust palate is perfectly supported by a beautiful acidity. The flavors combine slightly jasmine flowers with fruits, apple and pear, plum, prune, bitter orange. Then the candied fruits, lime honey, quince paste, wax and caramel prolong this dense and tight palate. The finish is straight and tense, almost going as far as minerality.
