From the Langhe, places where the vine has found one of its greatest expressions, comes the pomace of the great wines of Piedmont DOC – DOCG; the Grappas that derive from them find an extraordinary and exciting balance derived from the tanning in underground pits and from a long period of maturation in wood. The steam generated by the distillation of the pomace, enriched with the alcoholic-aromatic components, is condensed with subsequent fractional distillation of the phlegm in a copper column with 7 plates.
This procedure perfected by Romano Levi and still strictly respected today, guarantees the perfect maintenance of all the aromatic components, determining for the organoleptic characteristics of the Grappas. The discontinuous copper still with direct flame is the only one in the world still active for the distillation of Grappa.
On the hills of the Langhe which have proved to be one of the finest terroirs for the vine, the pomace of Nebbiolo grapes grown to make DOCG Barbaresco wine produces a Grappa of extraordinary, exhilarating balance resulting from curing underground and lengthy ageing in wood.
Medium amber color. Light notes of herbs and tobacco. Dry, balanced with hints of licorice and light vanilla finish.
