Hakkaisan Junmai Daiginjo Snow Aged 3YO

Hakkaisan Brewery is a renowned sake producer located in Niigata Prefecture, Japan, an area known for its pristine water and high-quality rice. Founded in 1922, Hakkaisan focuses on crafting clean, crisp, and elegant sake that reflects the natural beauty and purity of the region. The brewery uses traditional methods and pure spring water from Mt. Hakkai, striving for balance and smooth drinkability in every bottle.

This Junmai Daiginjo Genshu sake was matured alongside and chilled by a massive amount of snow stored in the same insulated room, known as “Yukimuro”. This method of storing food at low temperatures, using the abundant snow provided by nature, has been used traditionally in Japan's snowy region of Uonuma, for centuries. From the cold of the snow alone, temperature is naturally kept stable at 3 degrees Celsius without the use of electricity. After three years, the sake becomes round and very smooth.

Expressive and layered aromas of melon, green apple, Asian pear, citrus, and a powdered sugar with floral backdrop—evoking a delicate and refined fragrance profile. Exceptionally smooth, round, and viscous on the palate, it delivers a full-bodied feel with a rich, creamy mouth‑texture. A long, elegant finish with a whisper of minerality—like a “snowmelt”—that leaves a graceful, lingering impression.
