Bodegas Barón was founded by Manuel Barón Fernández in 1895 who acquired some old soleras. Manuel Barón’s wife had a much older family history in sherry though, so we could say Barón’s history goes back almost 400 years already. Today, ten generations later, the company is owned by Jose Rodriguez Jiménez. It is located in the barrio alto of Sanlúcar, where they store nearly 10.000 barrels of wine. 

Amontillado is a very unique wine due to its dual aging process: first under the layer of yeast, typical of Fino and Manzanilla, followed by a period in which the flor disappears and the wine is exposed to oxidation. Made from Palomino grapes, this fusion of aging processes makes the Amontillado wines extraordinarily complex and intriguing. 

Old golden color and the smell uncovers the sense of a praline chocolate box, liquor chocolates, toasted caramel, nuts, bitter almonds, natural woods and a recognizing salt mixture of acetaldehydes puncturing the pituitary gland. This wine provides in mouth a powerful entrance and fills the palate with a silky sensation. An iodine and bitter almond taste appears at this stage with a spicy and warm feeling that if held in mouth, you will squeeze the most of this flavor. It will leave a fresh taste during it’s long disappearing stage.
