Bodega Valdespino is one of the oldest bodegas in Jérez, originating in 1264, when King Alfonso X gave Don Alfonso Valdespino the gift of land in the City of Jérez.  In 1999, Valdespino was bought by Grupo Estévez who were able to fund and maintain the traditional methods for which Valdespino is famous. Valdespino Sherries remain among the very best quality available, and Inocente is still one the best Fino in the market, as well as being the only Sherry to be produced from the grapes of a single vineyard. 

Fino is a dry white wine made from Palomino grapes, which, as is the case with Manzanilla, is aged under a layer of yeasts. It is stored and aged in American oak butts using the traditional solera system in the bodegas of Jerez de la Frontera and El Puerto de Santa María. 

A very wide and rich nose for a relatively large-scale Fino, with a little more oak as well. It shows all the qualities of pure Albariza soils: mineral notes of warm chalk and ocean breeze. Dried hay. Light toast. Salted almonds. Some farmy hints and balanced notes of flor – you can easily imagine a damp cellar. It’s nice to see there are a few fruity hints as well, especially when the wine gets a little warmer. Even soft touches of vanilla. High complexity.
