Bodega Valdespino is one of the oldest bodegas in Jérez, originating in 1264, when King Alfonso X gave Don Alfonso Valdespino the gift of land in the City of Jérez.  In 1999, Valdespino was bought by Grupo Estévez who were able to fund and maintain the traditional methods for which Valdespino is famous. Valdespino Sherries remain among the very best quality available, and Inocente is still one the best Fino in the market, as well as being the only Sherry to be produced from the grapes of a single vineyard. 

Amontillado is a very unique wine due to its dual aging process: first under the layer of yeast, typical of Fino and Manzanilla, followed by a period in which the flor disappears and the wine is exposed to oxidation. Made from Palomino grapes, this fusion of aging processes makes the Amontillado wines extraordinarily complex and intriguing. 

This medium dry Amontillado has a light mahogany color with a bright amber border. The nose shows intense aromas of roasted hazelnuts, raisins and dates with butterscotch and toffee. This wine is medium-bodied with a long smooth finish and perfectly balanced moderate sweetness.
