Estate Argyros is a wine producer located on the island of Santorini in Greece. The vineyards are planted on volcanic soils and cover 26 hectares (65 acres) of land on the island. Native grape varieties are planted there, making wines in a range of styles, from dry whites to sweet vinsanto. The estate was originally founded in 1903 by Georgios Argyros, who started making local wines using traditional Santorinian methods. Argyros' vineyards are situated at altitudes ranging from 35-150m (115-500ft) above sea level, on the classic, dark volcanic soils of the island. The vines are cultivated in the traditional basket style which shelters the grapes from Santorini's strong winds.
Cuvee Evdemon is flirting with the boundaries of Estate Argyros’ understanding of the Santorinian environment. Biodynamically cultivated, very old Assyrtiko vineyards, at least 150 years old. Fermented, partially uninoculated, in stainless steel, at cool temperatures and aged for approximately thirty months in stainless steel tanks on fine lees, while a quarter of the blend had twelve months in French oak barriques and then the remaining months in stainless steel. A wine focusing on palate architecture that needs several years in bottle to open up while can reward cellaring for more than fifteen years.
Cuvee Evdemon has medium lemon color with greenish hues that show, at first glance, that it is still a baby. Enchanting nose with intense aromas of lemon, grapefruit, peach, lime, citron, almond, toast, smoke, and flint. In the mouth, it has an impressive structure and tremendous concentration. Rich body and sharp acidity are in perfect balance with the dense fruit and the subtle aromas of the barrel.
