Saints Hills (Croatia) is a boutique, family‑run winery founded in 2006 by Ivana and Ernest Tolj with the aim of crafting premium Croatian wines that reflect both the country’s rich viticultural heritage and the diverse terroirs of the Adriatic coast. The Tolj family collaborates with noted French oenologists, including Michel Rolland, to marry traditional Croatian grape varieties and vineyard character with modern winemaking techniques that respect nature and the landscape.
Black is a vibrant and expressive red wine made from 100 % Plavac Mali, the signature indigenous red grape of Dalmatia. Sourced from a blend of esteemed vineyards including Komarna and Dingač, Black showcases the rugged Mediterranean character. It’s vinified with careful attention to fruit purity and balanced structure, then matured in a combination of concrete vats, large wooden casks and small oak barrels to build depth without losing freshness.
In the glass Black displays an intense ruby colour with purple hues and a layered nose of ripe dark berries — blueberries, blackberries and plums — intertwined with evocative Mediterranean herbs like oregano and thyme. The palate is full‑bodied and richly fruited, with notes of dark plum, forest fruits and a touch of vanilla and spice, supported by smooth tannins and a long, lingering finish.
