Domaine Nathalie & Gilles Fèvre is a family-run wine estate in Chablis, Burgundy (France), with deep roots dating back to 1745 and officially established under its current name in 2004 by Nathalie and Gilles Fèvre, both trained oenologists. The domaine farms around 50–53 hectares of vineyards on classic Kimmeridgian limestone soils. Their style is defined by fresh, precise, mineral-driven Chardonnay with emphasis on terroir expression and purity, using mostly stainless-steel vinification with minimal oak influence and sustainable viticulture practices.
Les Preuses is a Grand Cru climat of Chablis, located on the eastern bank of the Serein river above the town of Chablis. This vineyard lies at the northern end of the Grand Cru slope, where Kimmeridgian soils and a sunny aspect make for an excellent terroir. The Chardonnay-based wines made in Preuses are rich and elegant, but less aromatic and with less obvious minerality than other Chablis Grand Cru wines.
The 2014 Les Preuses shows a fresh and complex profile, with aromas of ripe nectarine, clementine, apple and fresh citrus, supported by a fine mineral character. The palate is juicy and well balanced, with notes of peach, ripe lemon and citrus, alongside subtle hints of pineapple and delicate oak. The finish is long, precise and refreshing, with lingering citrus and mineral notes.
