Marisol Rubio is a family brand. It belongs to the name of a mother, a loving, thoughtful, sensitive woman committed to giving her best. Five generations. We were born among vineyards, olive groves, and grain crops, in a small village in Toledo called Villanueva de Alcardete. The estate covers an area of approximately 25 hectares and sits at an altitude of 837 meters. The estate is divided into different areas, which are cultivated and harvested separately according to varietal catalog, ranging from the most native typology of the area, Airen, to the most innovative, Pedro Ximénez.
The pressing process is carried out in a traditional horizontal wooden press, from which the free-run juice is extracted from the first strain and transferred to an underground concrete tank where a light static settling process takes place for 12 hours. The clean must then ferments in the concrete tank at a controlled temperature and during this process a partial skin maceration takes place. At the end of the alcoholic fermentation, the must-wine is introduced into new 225-liter oak barrels where it undergoes weekly battonage (aging on lees) until a few weeks before bottling.
Clean and bright gold color with steely and greenish reflections. A steady glass offers predominantly floral aromas (chamomile, jasmine, and lavender), ripe fruit, and spices. Aromas of fine yeast and bread crumbs are also noticeable. Subtle vanilla and white pepper nuances that come from new wood very balanced with the fruit. Long aftertaste with a fruity note of sweet ripe grape skins, almonds, Fuji apples, and a very pleasant spicy finish.
