Dom Pérignon is a celebrated Champagne brand owned by Moët & Chandon. The 17th-Century Benedictine monk Dom Pierre Pérignon is credited with its invention after taking up the position as the abbey's cellarer and procurator in 1668. Each vintage of Dom Pérignon is unique, with grapes sourced from only the best vineyards in Champagne. Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. Both Moët & Chandon and Dom Pérignon are now part of the LVMH group.
The 2008 Dom Perignon Rose spent a whopping 12 years on the lees before disgorgement. It is nothing short of a masterpiece with each working part humming along in unison. Pinot Noir grapes were sourced from “Chants de Linottes” parcels in Hautvillers as well as the “Vauzelles” parcels in Aÿ.
Right away the haunting aromatics grip the senses, with red rose petals, raspberry coulis, and suggestions of enoki mushroom, with bright kumquat blossom notes that all take shape in the glass. The palate shows refined bubbles and an ultra-silky mousse. Gorgeous layers of red fruits immediately greet you on the palate. With more air suggestions of peat moss and white truffle shavings enter the fray
