González Byass is one of Spain's best known Sherry winery (bodega). It is most widely known for its flagship brand Tío Pepe, although it produces a full range of famous Spanish fortified wine. In 1835, infected by the sherry boom of his time, Manuel María González purchased a bodega in Jerez. Although initially conceived as a pure trading house, he started to explore the production of wine and in 1844 the first own vines were added. Nowadays the firm owns about 650 hectares of prime sherry vineyards, most of which in the Jerez Superior area, and extensive vine nurseries. Gonzalez Byass have an extensive range of sherries, from low-end products to high-end, old wines.

Matusalem is a sweetened Oloroso or Oloroso Dulce. It carries the V.O.R.S. (Vinum Optimum Rare Signatum - Wine Selected as Optimal and Exceptional) label which means it’s at least 30 years old on average. It is one of four wines in a well-aged range that won numerous awards. An intensely rich Oloroso, Matusalem has been sweetened with the addition of some Pedro Ximinez.

On the nose, this wine explodes with aromas of toffee, chocolate and bags of dried figs, prunes and raisins. Hints of walnut liqueur and hazelnut cream. Different kinds of precious woods, sandalwood to name just one. A distant echo of lemon peel too. Actually not too sweet and the complexity is really high. On the palate it tastes oaky, leathery notes and dark chocolate appears too. A certain heat as well, probably because of the many herbs and spices (cloves, soft pepper). Roasted nuts, espresso. Some tangy lemon in the background.
