Bodegas Barón was founded by Manuel Barón Fernández in 1895 who acquired some old soleras. Manuel Barón’s wife had a much older family history in sherry though, so we could say Barón’s history goes back almost 400 years already. Today, ten generations later, the company is owned by Jose Rodriguez Jiménez. It is located in the barrio alto of Sanlúcar, where they store nearly 10.000 barrels of wine.
Fino is a dry white wine made from Palomino grapes, which, as is the case with Manzanilla, is aged under a layer of yeasts. It is stored and aged in American oak butts using the traditional solera system in the bodegas of Jerez de la Frontera and El Puerto de Santa María.
Yellow gold with copper tones color. Sharp smell, aromas of biological aging, nuts (hazelnut, almond), acetic and medical background smell. Dry, tasty, good acidity, volume and breadth. Very expressive and balanced. Step along with aromas of dried fruits and end with saline memories and from it’s biological aging. Elegant bitterness.
