Bodegas Barón was founded by Manuel Barón Fernández in 1895 who acquired some old soleras. Manuel Barón’s wife had a much older family history in sherry though, so we could say Barón’s history goes back almost 400 years already. Today, ten generations later, the company is owned by Jose Rodriguez Jiménez. It is located in the barrio alto of Sanlúcar, where they store nearly 10.000 barrels of wine.
Pedro Ximénez is obtained from the overly ripe grapes of the same name which are dried in the sun to obtain a grape juice with an exceptionally high concentration of sugar. Its ageing process, which is exclusively oxidative, gives the wine a progressive aromatic concentration and greater complexity, whilst fully preserving the characteristic freshness of the variety.
Ebony color with hints of iodine and with very wide tear and deep density sensation. The smell offers extremely rich aromas, dominated by the sweet notes of dried fruits such as raisins, figs and dates. Accompanied by aromas of honey, syrup and fruit compote. Accentuating the toasted tones (coffee, chocolate) by the aging time. The taste is velvety and creamy, with an acidity that mitigates the extreme sweetness and warmth of alcohol, and a long, delicious finish.
