Grapes for this wine are cultivated organically, harvested by hand and come from old vines with more than 30 years of age. Fermentation takes place at a very low temperature in stainless steel vats, with only 15% being carried out in used oak barrels. Wine is left on its lees until the beginning of May with a percentage of the blend being partially aged in large oak casks. Elegant, mineral and a wine that grows in your glass with a long complex finish.
