Don Papa Rum Sherry Cask

Don Papa Rum, created by Stephen Carroll, is promoted as the world’s first single-island rum from the Philippines. Inspired by the revolutionary leader Papa Isio and the lush island of Negros—known as “Sugarlandia”—the rum reflects the region’s spirit and culture. It’s handcrafted from Noble Cane, an ancient Southeast Asian sugarcane variety milled in traditional mills, producing rich “black gold” molasses. The island’s superior cane, volcanic soil, and tropical aging give Don Papa its distinctive sweetness and flavor.

First aged in ex-bourbon American oak barrels before being finished in four different types of sherry casks: Palo Cortado; Fino; Cream; and Pedro Ximenez. The resulting blend offers a delightfully dry, almost nutty nose with a rich, fruity taste and a wonderfully smooth finish.

Smooth and fruity on the nose with hints of ripe raisins, it has a full-bodied yet delicate sweetness with notes of plum, dark chocolate, and ripe figs. It has a light amber color and an extremely long finish, almost coating the palate with a velvet-like texture.
